Ashby’s Winter Eve Sweet is a cozy, dessert-leaning take on their seasonal winter release. On the nose, it opens with stewed cherries, clove, and a whisper of orange zest — like a mulled wine’s more polished cousin. The palate is genuinely sweet (true to name) but balanced by a gentle bitter-herbal backbone of gentian and cassia. Notes of honey, raisin, and a hint of dark chocolate linger.

It’s less complex than a traditional sweet vermouth but more approachable than a heavy amaro. Best served slightly warmed (not hot) with a lemon coin, or poured over vanilla ice cream for a lazy winter affogato.
